Vanilla Essence


Cream the margarine and Castor Sugar. Add unbeaten egg. Add vanilla essence and mix. Add sifted flour, salt and baking powder. Mix well. Doug is very soft.
Roll into balls and press down with fork. Bake in oven of 180’C for about 10 minutes. You can add any of the following to dough if desired:
Rice crispies / Coconut / Grated Chocolate / Raisins / Mixed Fruit / Chopped Cherries

Nanna’s Biscuits

Boil sugar and milk together, until just on the boil. Remove from heat and add the bicarb. Stir well and allow to cool.
Add vanilla essence. Rub marg into flour and salt until it resembles crumbs.
Add the sugar and milk mixture and mix well. Use biscuit gun or roll dough out and cut into desired shapes. Bake at 180’C for about 10 minutes.

In medium size saucepan place butter, vanilla essence, dates and sugar. Cook over medium heat until frothy.
Allow to cool slightly. Add egg and biscuits. Mix well. Shape into small balls. Roll in coconut to coat. Refrigerate until required. Makes 26.

Place butter and sugar in mixing bowl and beat until well combined. Beat in egg. Using metal spoon, stir in flour, ginger and nutmeg. Place on a board and knead into firm dough.
Roll into balls. Press lightly with fork. Place on greased baking tray. Baking in cool oven of 150’C for 30 – 40 minutes. Cool on wire tray.

Mom-in-law’s Biscuits

Place Oatmeal in blender to make fine powder. Cream Butter and both Sugars. Add Eggs and Vanilla Essence. Mix together with Flour, Oatmeal, Salt, Baking Powder and Bicard. Add Choc Chips and Nuts. Roll into balls and place 2 inch apart on baking sheet. Bake at 190’C for approx 10 minutes.

Biscuits will be soft when removed from oven. Will become crispy when cool.
(*) Choc Chips can be substituted with raisins.

Mommy’s Rice Crispies Biscuits

Margarine

Rice Crispies


Cream margarine and sugar. Add eggs one at a time. Beat well. Add vanilla essence. Add flour, coconut, oats and bicarb, baking powder and salt.
Add to marg mixture, and lastly add rice crispies. The mixture must be very stiff. Make balls – flatten slightly with a fork. Bake at 190’C for 10 minutes.





Cynthia’s Bran Muffins

All Bran OR Raisin Bran Flakes
Bicarb
Sugar
Flour
Salt
Oil
Buttermilk
Raisins
Digestive Bran (optional)


Mix dry ingredients together in large bowl. Add oil, buttermilk and eggs. Add the raisins. Mix well and put in fridge overnight. Mixture can be baked immediately or can be stored in fridge (in Tupperware bowl) for few weeks. Use tablespoon and spoon into greased patty pans. Bake in oven of 180’C for 10 – 15 minutes.

Combine dry ingredients. Add milk and mix well. Spoon into greased patty pans. Bake at 190 – 220’C for 10 minutes. Serve hot.

Mix all ingredients together and place in warming draw for ½ hour. Once the dough has matured, bake at 180’C for 1 hour.

Sift dry ingredients together. Pour in Buttermilk. Mix well. Makes 1 loaf. Bake at 180’C for 1 ¼ hours.

Aunty Nellie’s Short Bread

Price all over with fork. Bake in oven of 140’C for about 1 hour.

Cynthia’s Apple Tart

Pie Apples

   Cinnamon and castor sugar mixed

Mix all ingredients together until it resembles crumbs. Press ¾ of mixture into pie plate. Cover with pie apples. Sprinkle with castor sugar and cinnamon.
Sprinkle the remaining dough on top. Bake in oven of 190’C for 25 – 30 minutes. Sprinkle a little more castor sugar and cinnamon on top.
